Q - Are your cattle antibiotic and hormone free?
A - Just like if your pet of child was sick, you would want to give them the best care possible. We do that with our cattle. We follow to the rules and guidelines with the medications and best practice with our local vet. Our cattle do not get anything that won't keep them healthy and make the best quality meat. If we skip on our medication procedures, that means sick and possible dead cattle. Which in turns means higher priced meat. Each steer is free of all medication with room to spare according to the medication label before going off to get processed.
Q - How much meat will I get?
A - Our cattle go in between 1100 and 1400 lbs. Around 63% of that is your hot hanging weight 690 to 880 lbs. This is the poundage you pay on. Then the carcass will cool down and evaporate and put into the specialty cuts that you order. What you get back will depend on your cut sheet, but you can expect around 60% back from that. 414 to 530 lbs . These are whole cattle weights.

Q - How is your cattle grass-fed, grain finished?
A - Depending on the time and age we get the cattle in, they will be on pasture (spring and summer) or on hay and alfalfa bales (fall and winter). Once harvest is done, we open the field up and they graze the corn stalks. Going into 1000lbs we start to implement cracked corn to their diets. This allows them to get feed easier and faster. Which puts more fat on and increases the white marbling and taste that you desire.
